Reducing food waste: when portion choice makes the difference

Even the smallest actions can contribute to a more sustainable future.

This is what a study by the Free University of Bozen-Bolzano reveals, conducted at the Bressanone campus canteen managed by Markas.

The research, highlighted in the article “Reducing Food Waste through Awareness” published in the Südtiroler Wirtschaftszeitung – SWZ, shows how something as simple as letting students decide their own portion size can reduce food waste by up to 9%.
It is a powerful reminder that practical, everyday strategies can help people make more mindful food choices — and that awareness is a crucial driver of change.

Raising awareness to reduce waste

The study was accompanied by an awareness campaign within the university canteen.

Through clear and strategically positioned messages, students were encouraged to reflect on their actual level of hunger and to request from the canteen staff only the quantity of food they truly needed — thus becoming, as the initiative described, “empty plate heroes.”
The results were highly encouraging:
  • 56% of users reported noticing the campaign.
  • 22% stated they had consciously reduced food waste within the canteen.
  • 10% indicated they had begun adopting more mindful eating habits at home as well.

These findings confirm that targeted awareness initiatives can produce tangible outcomes, contributing not only to a reduction in food waste but also to the development of more responsible and sustainable everyday habits.
