Markas and Behavix: our effort to reduce food waste

At Markas, sustainability is a commitment that guides us every day, at every level: economic, social, and environmental. For us, innovation and sustainability are closely linked, representing two fundamental pillars that shape every decision we make.

Even in the effort to reduce food waste, we aim to apply innovative technologies and new solutions to continuously improve. Food waste not only represents an economic cost but also has a negative impact on the environment and the overall experience of those we serve.

To address this challenge, we have launched a pilot project with the startup Behavix at the Free University of Bozen-Bolzano, with the goal of reducing food waste.



One step at a time: what is Behavix?
Behavix is a startup focused on reducing food waste in collective catering. How? By combining technology, user engagement and behavioral economics.

Through digital tools and data analysis, Behavix helps companies better understand the causes of food waste, enabling them to adopt targeted solutions.

Pilot project at the Free University of Bozen-Bolzano


Launched in collaboration with Behavix at the Free University of Bozen-Bolzano, the project aims to analyze the potential causes of food waste and identify concrete actions that can improve our service.


How does it work? In practice, students and professors at the Free University of Bozen-Bolzano have the opportunity to register or leave anonymous feedback via QR code or a dedicated website. Every time something is left uneaten on their plate, diners can indicate whether the reason is related to taste or other factors (time, stress, portion size).

The feedback received is then cross-referenced with the food waste recorded on the same day, using an optical scale.

Additionally, through the platform available to them, diners can track food waste trends in the cafeteria, feeling actively involved in this improvement process.

To encourage participation, a few diners are randomly selected each week to win a treat or dessert as a reward.

Our effort to tackle food waste continues

The first data collected since the launch of the project in November 2025 is positive in terms of tracking food waste. With over 250 feedback responses collected, we’ve found that the leftover food in the cafeteria at the Free University of Bozen-Bolzano is relatively low.

Overall, this project and Behavix's approach align perfectly with our primary goal: to bring our menus closer to the tastes and needs of our diners while optimizing processes to reduce food waste and, consequently, our environmental impact.

It’s a great challenge, and we’re ready to take it on!
